Instructions

  1. Prepare the Ingredients: Cook the thick-cut bacon in a skillet over medium heat until it is crisp. Drain the bacon on paper towels and chop into bite-sized pieces. Peel and dice the potatoes; parboil or lightly sauté them until just tender. If using, chop the onions and bell peppers.
  2. Layer the Casserole: Grease a baking dish. Spread the prepared potatoes evenly across the bottom. Sprinkle the chopped crispy bacon over the potatoes. Add the sautéed onions and peppers evenly on top for extra flavor and texture if using.
  3. Mix and Add the Egg Mixture: In a large bowl, whisk the eggs together with the milk or cream until combined. Season with salt and pepper to taste. Stir in the grated cheese. Pour this egg mixture evenly over the layered ingredients in the prepared baking dish.
  4. Bake Until Golden: Preheat the oven to 350°F (175°C). Bake the casserole for 35 to 45 minutes, or until the eggs are fully set, the top is golden brown, and slightly puffed.
