Ingredients

Scale

Beef and Vegetables

  • 8 oz flank steak or sirloin, thinly sliced against the grain
  • 2 cups fresh broccoli florets
  • 2 green onions, sliced

Noodles

  • 1 package (about 3 oz) ramen noodles (discard seasoning packet)

Sauce

  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 1 tablespoon brown sugar
  • 2 teaspoons water

Aromatics and Seasonings

  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1 tablespoon vegetable oil
  • Optional: red pepper flakes, to taste

Instructions

  1. Prep the Ingredients: Thinly slice the beef against the grain for tenderness. Chop broccoli into bite-sized florets. Mince garlic and ginger, and slice green onions. Set aside ramen noodles. Prepare the sauce by mixing soy sauce, brown sugar, and water.
  2. Cook the Ramen Noodles: Boil water and cook ramen noodles according to package instructions, keeping them slightly firmer than usual as they’ll finish cooking in the stir fry. Drain and toss with a small drizzle of oil to prevent sticking.
  3. Sear the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef slices in batches to avoid overcrowding. Cook until browned but still juicy, about 1-2 minutes per side. Remove beef and set aside.
  4. Stir-Fry Broccoli and Aromatics: In the same pan, add a little more oil if needed. Add broccoli, garlic, and ginger. Stir-fry for 3-4 minutes until broccoli is bright green and crisp-tender.
  5. Combine Everything: Return beef to the pan with drained ramen noodles. Pour the sauce over, tossing to coat all ingredients evenly. Cook another 2 minutes until heated through and sauce thickens slightly.
  6. Garnish and Serve: Sprinkle chopped green onions and optional red pepper flakes over the top. Serve hot and enjoy!

Notes

  • For extra tenderness, marinate beef briefly with soy sauce and cornstarch before cooking.
  • Cook beef in batches to avoid steaming and ensure a nice sear.
  • Use high heat to maintain crisp-tender vegetables.
  • Reserve some noodle cooking water to loosen sauce if it becomes too thick.
  • Serve immediately for best texture to prevent noodles from clumping.
  • Optional garnishes include toasted sesame seeds or a drizzle of toasted sesame oil.
