Instructions

  1. Crush the Biscoff Cookies: Place Biscoff cookies in a sealed plastic bag and crush with a rolling pin or pulse in a food processor until fine crumbs form with some texture remaining.
  2. Mix Cookies with Cream Cheese: In a mixing bowl, combine the crushed cookies, softened cream cheese, and powdered sugar. Stir until smooth and pliable.
  3. Form the Truffle Centers: Shape the mixture into bite-sized balls using your hands or a small cookie scoop. Place on a parchment-lined tray and chill in the refrigerator for at least 30 minutes.
  4. Melt the Chocolate Coating: Melt your choice of chocolate in a microwave-safe bowl or over a double boiler, stirring frequently until smooth and glossy.
  5. Dip and Decorate: Dip each chilled truffle ball into the melted chocolate ensuring an even coat. Place back on parchment and add sprinkles or crushed Biscoff crumbs while the chocolate is wet.
