Instructions

  1. Prepare the Cookie Dough: Start by creaming softened unsalted butter and granulated sugar until light and fluffy. Beat in eggs and vanilla extract, then gradually mix in the flour to form a smooth, pliable dough. Chill the dough for at least 30 minutes to make it easier to handle.
  2. Bake the Cookies: Preheat your oven to 350°F (175°C). Roll the chilled dough into small balls and place them on a parchment-lined baking sheet, spacing them evenly. Bake for 10-12 minutes or until edges are lightly golden. Allow cookies to cool completely on a wire rack before filling.
  3. Make the Custard Filling: In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks over medium heat. Stir continuously until thickened to a smooth pudding consistency. Remove from heat and mix in vanilla extract and powdered sugar. Transfer to a bowl, cover with plastic wrap directly on the surface, and chill until firm.
  4. Prepare the Chocolate Ganache: Gently melt semi-sweet chocolate chips with a splash of heavy cream in a microwave or double boiler. Stir until shiny and smooth, adjusting cream quantity for desired thickness.
