Instructions

  1. Roast the Butternut Squash: Preheat your oven to 400°F (200°C). Peel and cube the butternut squash evenly to ensure uniform roasting. Toss the cubes with 2 tablespoons olive oil, salt, pepper, and fresh thyme or sage. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway until tender and lightly caramelized.
  2. Prepare the Bread: While the squash roasts, slice the baguette or rustic bread into about 1/2-inch rounds. Brush each slice lightly with olive oil. Toast the slices under a broiler or in a skillet until golden and crispy on both sides, taking care not to burn them.
  3. Assemble the Crostini: Once the squash is roasted and the bread toasted, spread a generous layer of softened goat cheese or ricotta on each bread slice. Top with several cubes of roasted butternut squash. Drizzle with honey or maple syrup, then finish with a sprinkle of fresh herbs and freshly cracked black pepper.
