Ingredients

Scale

Vegetables and Aromatics

  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 23 garlic cloves, minced
  • 4 medium Yukon Gold or Russet potatoes, peeled and diced

Sausage and Cheese

  • 12 oz Andouille or smoked sausage, sliced into thin rounds
  • 1 1/2 cups sharp cheddar cheese, shredded

Liquids and Fats

  • 4 cups chicken broth
  • 1 cup milk or cream
  • 2 tablespoons butter

Seasonings and Thickener

  • 2 tablespoons all-purpose flour (or gluten-free flour blend)
  • 12 tablespoons Cajun seasoning (paprika, cayenne, garlic, herbs blend)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Prepare the vegetables and sausage: Dice the onion, celery, and bell pepper. Slice the sausage into thin rounds. These fresh ingredients form the flavor base of the soup.
  2. Sauté the sausage and vegetables: In a large pot over medium heat, brown the sausage until crispy and the oils release. Remove and set aside. In the same pot, sauté the diced onion, celery, and bell pepper until softened and fragrant.
  3. Make the roux: Add butter to the sautéed vegetables and melt completely. Stir in the flour and cook for 2 minutes, whisking constantly to avoid lumps, creating a roux that will thicken the soup.
  4. Add broth and potatoes: Gradually pour in the chicken broth while whisking. Add the diced potatoes and bring to a simmer. Cook for 15-20 minutes until the potatoes are tender enough to mash slightly.
  5. Season and blend: Stir in Cajun seasoning, minced garlic, salt, and pepper. For texture, mash some potatoes with a masher or blend a portion for creaminess. Return the sausage to the pot.
  6. Stir in cheese and cream: Reduce heat to low. Gradually add shredded cheddar cheese and milk or cream, stirring until the cheese melts into a smooth, velvety soup. Adjust seasoning as needed.

Notes

  • Use authentic Andouille sausage for signature Cajun smokiness.
  • Don’t skip the roux; it’s key for a thick, creamy texture.
  • Simmer gently after adding cheese to prevent curdling.
  • Adjust Cajun seasoning gradually to control heat and saltiness.
  • Yukon Gold potatoes hold shape while breaking down for creaminess.
