Instructions

  1. Prepare the potatoes: Wash and peel the potatoes if desired. Using a mandoline or sharp knife, slice them evenly about 1/8 inch thick to ensure uniform cooking and perfect layering.
  2. Make the cheese sauce: In a saucepan over medium heat, melt the butter. Add the finely diced onions and minced garlic, cooking until translucent. Stir in the flour to create a roux, cooking for about 1-2 minutes. Gradually whisk in the milk, stirring constantly until thickened. Remove from heat and stir in the shredded Cheddar cheese, salt, pepper, and nutmeg until the sauce is smooth and creamy.
  3. Layer the potatoes and sauce: Lightly grease a baking dish. Arrange a layer of potato slices evenly on the bottom, then pour some cheese sauce over the potatoes. Repeat layering potatoes and sauce until all ingredients are used, finishing with a generous layer of cheese sauce and optionally sprinkling Parmesan cheese on top.
  4. Bake to golden perfection: Cover the dish tightly with foil and bake in a preheated oven at 350°F (175°C) for 45 minutes. Remove the foil and bake uncovered for an additional 15 minutes, or until the top is bubbly and golden brown.
  5. Rest before serving: Allow the scalloped potatoes to cool and set for 10 minutes before serving to enhance flavor and make slicing easier.
