Ingredients

Scale

Pie Crust

  • 1 9-inch flaky pie crust (store-bought or homemade, gluten-free if needed)

Filling

  • 1 cup fresh chopped pecans
  • 4 oz semi-sweet or dark chocolate, chopped
  • 1/4 cup bourbon
  • 1 cup brown sugar, packed
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Pie Crust: Fit your pie crust into a 9-inch pie dish, trim excess dough, and crimp the edges. Chill the crust in the refrigerator for 15 minutes to prevent shrinking during baking.
  2. Pre-Bake the Crust: Line the chilled crust with parchment paper and fill with pie weights or dried beans. Bake at 350°F (175°C) for 10 minutes, then remove weights and paper and bake an additional 5 minutes until lightly golden.
  3. Make the Filling: In a medium saucepan, melt butter over low heat. Stir in brown sugar, corn syrup, and bourbon until combined and warm. Remove from heat and whisk in eggs and vanilla extract. Fold in chopped pecans and chopped chocolate evenly.
  4. Assemble and Bake: Pour the filling into the pre-baked crust and spread evenly. Bake at 350°F (175°C) for 50-60 minutes, or until the filling is set but still slightly jiggly in the center.
  5. Cool and Serve: Allow the pie to cool completely on a wire rack for at least 2 hours to let the filling firm up. Slice and enjoy your Chocolate Pecan Pie with Bourbon.

Notes

  • Chill the crust to prevent shrinkage and keep edges crisp.
  • Use fresh, toasted pecans for deeper flavor and added crunch.
  • Do not overbake; a slight jiggle in the center ensures proper setting as it cools.
  • Use room temperature eggs for smoother incorporation and uniform custard texture.
  • Let the pie rest fully before slicing for clean slices and perfect texture.
