Instructions

  1. Prepare the Bread: Cut the French bread loaf into 1- to 1.5-inch cubes. You can leave them attached in loaf form for pull-apart style or separate completely for individual bites.
  2. Cut the Brie: Slice the brie cheese into small cubes that fit inside or on top of the bread chunks. You may remove the rind if preferred, though it softens when baked.
  3. Mix Cranberries and Butter: In a small bowl, combine the melted butter, honey, and chopped fresh rosemary or thyme if using. Toss the dried cranberries into this mixture to coat them evenly.
  4. Assemble the Bites: Arrange the bread pieces in a baking dish or on a lined baking sheet. Nestle brie cubes between and atop the bread pieces, then evenly drizzle the cranberry and butter mixture over everything.
  5. Bake Until Golden: Preheat the oven to 350°F (175°C). Bake the assembled bites for 15-20 minutes, or until the brie is melted and the bread turns a golden-brown color.
