Instructions

  1. Prepare the Chicken: Season the chicken breasts evenly with salt and pepper. Heat olive oil and butter together in a large skillet over medium heat. Cook the chicken breasts until golden brown on both sides and just cooked through, about 5-7 minutes per side depending on thickness. Remove the chicken from the pan and set aside to rest.
  2. Sauté the Mushrooms and Aromatics: In the same pan, add additional butter if needed. Add sliced mushrooms, chopped shallots, and minced garlic. Sauté until the mushrooms turn golden brown and the shallots become translucent, releasing a fragrant aroma, about 5-6 minutes.
  3. Build the Dijon Cream Sauce: Pour in the chicken broth to deglaze the pan, scraping up any browned bits stuck to the bottom. Stir in the Dijon mustard and heavy cream. Allow the sauce to gently simmer until it thickens to a silky consistency, approximately 3-5 minutes. Avoid boiling to keep the sauce smooth.
  4. Combine and Finish: Return the cooked chicken breasts to the skillet, spooning the creamy mushroom sauce over each piece. Heat everything through for 2-3 minutes. Sprinkle with fresh thyme or parsley before serving to add a fresh herbal finish.
