Perfect for busy weeknights, it balances sweet, savory, and fresh flavors in one wholesome dish that requires minimal preparation and cleanup.

Ingredients

Scale

Protein

  • 4 boneless, skinless chicken breasts

Vegetables

  • 3 cups fresh broccoli florets

Sauce

  • 1/3 cup honey
  • 4 garlic cloves, minced
  • 1/4 cup soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup water or chicken broth
  • Optional: 1/4 teaspoon red pepper flakes

Thickening Agent

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water (for slurry)

Instructions

  1. Prepare the sauce mixture: In a medium bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, sesame oil, and water or chicken broth until fully combined. This sauce will be the flavorful base that infuses the chicken and broccoli.
  2. Layer the chicken in the crockpot: Place the chicken breasts evenly in the bottom of your crockpot. Pour the sauce mixture over the top, ensuring each piece is well coated. The slow cooker will tenderize the meat as it soaks in all the savory sweetness.
  3. Slow cook the chicken: Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is cooked through and tender. Avoid opening the lid frequently to maintain consistent heat.
  4. Add broccoli near the end: About 30 minutes before cooking finishes, add the broccoli florets on top of the chicken. This keeps the broccoli crisp and vibrant without becoming mushy.
  5. Thicken the sauce: In a small bowl, mix cornstarch with cold water to make a slurry. Stir this into the crockpot sauce and cook uncovered for an additional 10-15 minutes to thicken and coat the ingredients.

Notes

  • Use fresh garlic for maximum flavor.
  • Do not skip the cornstarch slurry to get a glossy, thick sauce.
  • Cut broccoli into uniform florets for even cooking.
  • Add broccoli late to keep it from becoming mushy.
  • Cooking on low heat yields juicier, more tender chicken.
