Instructions

  1. Prepare the Peaches: Peel, pit, and slice 5 to 6 large fresh peaches. Toss them gently with ½ cup sugar and 1 teaspoon cinnamon if using. Set aside to macerate while preparing the batter.
  2. Mix the Batter: In a large bowl, whisk together 1 cup all-purpose flour, 1¼ cups sugar, 1½ teaspoons baking powder, and ¼ teaspoon salt. Stir in 1 cup milk and ⅓ cup melted butter until smooth and combined.
  3. Assemble the Cobbler: Preheat oven to 375°F (190°C). Butter a 9×13 inch baking dish. Pour half the batter into the dish. Spoon the peach mixture evenly over the batter. Carefully pour the remaining batter on top; it doesn’t need to cover all peaches completely as it will spread while baking.
  4. Bake to Perfection: Bake for 40 to 45 minutes or until the top is golden brown and a toothpick inserted into the crust comes out clean. Peach juices will bubble around the edges, signaling it’s ready.
