Ingredients

Scale

Main Ingredients

  • 8 oz cream cheese, softened
  • 2 cups graham crackers, crushed finely (or gluten-free graham crackers/ground almonds for gluten-free)
  • 1 cup powdered sugar, plus extra for coating
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground clove
  • 1 tsp vanilla extract

Optional Coatings and Garnishes

  • Cocoa powder (for coating)
  • Finely chopped pecans or walnuts (for coating)
  • Crushed candy canes (for garnish)
  • Freshly grated nutmeg (for garnish)
  • Melted dark or milk chocolate (for dipping)

Instructions

  1. Prepare the Graham Cracker Crumbs: Place graham crackers in a food processor or a sealed plastic bag and crush them into fine crumbs. These provide the gingerbread-like texture and help absorb moisture to keep truffles firm.
  2. Mix the Spices and Cream Cheese: In a large bowl, combine softened cream cheese with ground cinnamon, ground ginger, nutmeg, clove, vanilla extract, and powdered sugar. Beat until smooth and evenly blended to form the truffle base.
  3. Incorporate the Crumbs: Gradually fold the graham cracker crumbs into the spiced cream cheese mixture. Mix gently but thoroughly until a dense, moldable dough with uniform spice flavor forms.
  4. Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for at least 1 hour. This firms the dough and makes it easier to roll into truffles.
  5. Roll and Coat the Truffles: Using a small cookie scoop or your hands, shape the chilled mixture into 1-inch balls. Roll each ball in powdered sugar, cocoa powder, chopped nuts, or your preferred coating. Place on a parchment-lined baking sheet.
  6. Final Chill and Serve: Refrigerate the rolled truffles for an additional 30 minutes to lock in shape and flavors before serving.

Notes

  • Use room temperature cream cheese for easier mixing and smoother texture.
  • Don’t skip the chilling steps to ensure truffles firm up without crumbling.
  • Adjust spice amounts (ginger, cinnamon, clove) according to your taste preferences.
  • If the mixture softens while rolling, refrigerate it briefly to firm up.
  • Coat or dust truffles just before serving to maintain fresh appearance and flavor.
