Ingredients

Scale

Base Ingredients

  • 45 cups gluten-free bread cubes (e.g., sourdough or multigrain), toasted
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 1/2 cup finely chopped carrots
  • 23 tbsp butter or olive oil
  • 1/4 cup chopped fresh herbs (sage, thyme, rosemary, parsley)
  • 23 cups warm chicken, vegetable, or turkey broth
  • Salt and freshly ground black pepper, to taste

Optional Add-Ins

  • 1/2 cup toasted nuts (pecans or walnuts)
  • 1/2 cup dried fruit (cranberries or apricots)
  • 1 cup cooked gluten-free sausage, browned
  • Extra mushrooms (for vegetarian version)

Instructions

  1. Prepare the Gluten-Free Bread: Cut gluten-free bread into cubes and toast them in the oven or a dry pan until golden and slightly crisp. This ensures the bread holds texture when combined with liquids.
  2. Sauté the Vegetables: In a large skillet, melt butter or heat olive oil over medium heat. Add finely chopped onions, celery, and carrots, cooking for 5-7 minutes until tender and fragrant.
  3. Mix the Stuffing Base: In a large bowl, combine the toasted bread cubes with the sautéed vegetables. Stir in chopped fresh herbs, salt, and pepper. Fold in any optional add-ins such as nuts, dried fruit, or cooked sausage.
  4. Add Broth and Combine: Gradually pour the warm broth over the bread mixture while gently tossing to moisten the bread evenly without making it soggy. Add broth slowly to reach desired consistency.
  5. Bake Until Perfect: Transfer the stuffing into a greased baking dish. Bake at 350°F (175°C) for 30-40 minutes until the top is golden brown and slightly crisp.

Notes

  • Use day-old or slightly stale gluten-free bread to help absorb liquids better and maintain texture.
  • Add broth gradually to keep stuffing moist but not soggy.
  • Fresh herbs like sage and thyme enhance aroma and flavor.
  • Sauté vegetables thoroughly to bring out their natural sweetness.
  • Allow stuffing to rest for a few minutes after baking to let flavors meld.
