Instructions

  1. Prepare the Soup Gelatin: Simmer a rich broth infused with aromatics and gochujang chili paste until flavorful. Pour the broth into a shallow dish and chill it in the refrigerator until it sets into a firm gelatin. Once set, cut the gelatin into small cubes that will melt inside the dumplings while steaming.
  2. Make the Dumpling Filling: In a bowl, combine ground pork or chosen protein with finely chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, and gochujang paste. Gently fold in the chilled soup gelatin cubes, being careful not to break them to preserve the soupy center.
  3. Assemble the Dumplings: Place a spoonful of filling in the center of each dumpling wrapper. Carefully pleat and seal the edges tightly to ensure there are no leaks, which will keep the soup trapped inside during cooking.
  4. Steam to Perfection: Arrange the assembled dumplings in a steamer basket lined with parchment paper or cabbage leaves to prevent sticking. Steam over boiling water for 8-10 minutes, until the wrappers turn translucent and the filling is cooked thoroughly.
