  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Vegetables: Wash and dice the tomatoes into bite-sized chunks. Peel and slice the cucumbers into rounds or half-moons based on your preference. Thinly slice the red onion and roughly chop fresh parsley or oregano.
  2. Combine Ingredients: In a large bowl, gently toss together the tomatoes, cucumbers, red onion, kalamata olives, and fresh herbs to distribute evenly.
  3. Add the Feta Cheese: Sprinkle crumbled feta cheese over the vegetable mixture, allowing its creamy texture to contrast with the crisp veggies and salty olives.
  4. Make the Dressing: In a small bowl, whisk together extra virgin olive oil, fresh lemon juice or red wine vinegar, dried oregano, salt, and freshly ground black pepper until well combined.
  5. Toss and Serve: Pour the dressing over the salad and gently toss to coat all ingredients evenly without breaking up the feta too much. Serve immediately for the freshest flavors.
