Ingredients

Scale

Protein

  • 2 grilled chicken breasts, seasoned and sliced
  • 4 hard-boiled eggs, peeled and quartered
  • 4 slices crumbled cooked bacon (optional but recommended)
  • 1/2 cup shredded cheddar cheese

Fresh Vegetables

  • 6 cups romaine lettuce, washed and chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced thinly
  • 1/2 medium red onion, thinly sliced
  • 1 avocado, diced

Dressing

  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Season chicken breasts with salt, pepper, and your favorite herbs, then grill or pan-sear until cooked through and nicely charred. Let rest for a few minutes before slicing into strips.
  2. Boil the Eggs: Place eggs in boiling water and cook for 10-12 minutes until hard-boiled. Cool in ice water, peel, and slice into quarters.
  3. Chop Fresh Veggies: Wash and chop romaine lettuce, halve cherry tomatoes, slice cucumbers and red onions thinly, and dice avocado last to prevent browning.
  4. Cook and Crumble Bacon: Cook bacon in a hot skillet until crisp. Drain on paper towels and crumble into bite-sized pieces.
  5. Make the Honey Mustard Dressing: Whisk together honey, Dijon mustard, olive oil, lemon juice, salt, and pepper until smooth and emulsified.
  6. Assemble the Salad: In a large bowl or platter, layer the lettuce first, then arrange chicken slices, eggs, tomatoes, cucumbers, avocado, bacon, shredded cheddar, and onions artfully on top.
  7. Drizzle Dressing: Pour the honey mustard dressing over the salad just before serving or serve on the side as preferred.

Notes

  • Prep chicken ahead to save time during assembly.
  • Use fresh, in-season produce for the best flavor.
  • Slice vegetables evenly for balanced bites.
  • Adjust honey and mustard in dressing to control sweetness and tanginess.
  • Keep the salad chilled until serving to maintain freshness and crunch.
  • Store leftover components separately to prevent sogginess.
  • Cooked chicken can be frozen for up to 3 months; avoid freezing fresh veggies and dressing.
  • Reheat grilled chicken gently before adding fresh ingredients for a quick meal.
