Italian Pot Roast

Italian Pot Roast is a comforting slow-cooked dish featuring tender chuck roast simmered with fragrant Italian herbs, garlic, crushed tomatoes, and classic vegetables. This rich and hearty meal delivers deep, soulful flavor with minimal effort, perfect for family dinners, special occasions, or sharing with guests. Versatile and easy to prepare, it can be enjoyed fresh or reinvented into sandwiches, pastas, and stews.

Ingredients

Scale

Meat

  • 3 to 4 pounds chuck roast

Seasonings & Herbs

  • 2 teaspoons Italian seasoning (oregano, basil, thyme blend)
  • Salt and pepper to taste

Vegetables & Aromatics

  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced

Liquids

  • 1 can (28 ounces) crushed tomatoes
  • 2 cups beef broth
  • 1/2 cup red wine (optional)

Other

  • 2 tablespoons olive oil

Instructions

  1. Prepare the Ingredients: Pat the chuck roast dry with paper towels to ensure a good sear. Chop onions, carrots, and celery into bite-sized pieces and mince the garlic cloves, setting all aside.
  2. Sear the Roast: Heat olive oil in a large heavy-bottomed pot over medium-high heat. Once hot and shimmering, carefully brown the roast on all sides, about 4 minutes per side, to lock in juices and add depth of flavor.
  3. Sauté Aromatics: Remove the roast temporarily from the pot. Add onions, carrots, celery, and garlic to the pot and cook until softened and fragrant, about 5 to 7 minutes, forming a rich base for the sauce.
  4. Deglaze and Add Liquids: Pour in the optional red wine to deglaze the pot, scraping up browned bits from the bottom. Then add crushed tomatoes and beef broth, stirring to combine, creating a flavorful liquid to cook the roast in.
  5. Season and Slow Cook: Return the roast to the pot. Sprinkle with Italian seasoning, salt, and pepper. Cover and simmer on low heat for 3 to 4 hours, or until the meat becomes fork-tender and the sauce thickens, allowing connective tissues to break down for velvety texture.
  6. Finish and Serve: When done, remove the roast and let it rest briefly before slicing. Stir the sauce to meld flavors fully, then serve it spooned generously over the sliced meat for a rich and comforting meal.

Notes

  • Use a heavy pot such as a Dutch oven for even heat distribution during searing and slow cooking.
  • Do not skip searing the meat, as it builds essential flavor layers in the dish.
  • Cook slowly at low temperature to tenderize the meat thoroughly.
  • Allow meat to rest after cooking to keep juices sealed inside.
  • Adjust seasoning with salt and pepper at the end to perfectly balance the flavors.
