Ingredients

Scale

Chicken Filling

  • 1 lb boneless chicken breast
  • 2 tsp ranch seasoning mix
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded fresh mozzarella cheese

Dough & Coating

  • 1 package pizza dough or crescent roll dough (about 8 oz)
  • 2 tbsp olive oil or melted butter
  • 1 tsp paprika

Optional Garnishes

  • Fresh parsley, chopped
  • Fresh chives, chopped

Instructions

  1. Prepare the Chicken and Cheese Filling: Cook the chicken breast seasoned with ranch seasoning mix, garlic powder, salt, and pepper until fully cooked and tender. Let it cool slightly, then dice into small bite-sized pieces. Mix the diced chicken with shredded mozzarella cheese to create the gooey filling.
  2. Roll Out the Dough: On a lightly floured surface, roll out the pizza or crescent roll dough into a thin, even layer suitable for cutting into portions, ensuring each bomb will have a nicely wrapped exterior that crisps well.
  3. Assemble the Chicken Bombs: Cut the dough into squares or rectangles as preferred in size. Place a spoonful of the chicken and mozzarella filling in the center of each piece. Fold and seal the dough securely around the filling by pinching the edges tightly to prevent cheese leakage during baking.
  4. Add the Final Touches and Bake: Brush each assembled bomb lightly with olive oil or melted butter mixed with paprika for color and a subtle smoky flavor. Arrange on a parchment-lined baking sheet. Bake at 375°F (190°C) for 15–20 minutes until golden brown and crispy on the outside.

Notes

  • Avoid overfilling to prevent bombs bursting open while baking.
  • Chill assembled bombs in the fridge for 10 minutes before baking to help maintain shape.
  • Use fresh mozzarella for a creamier melt compared to pre-shredded cheese.
  • Brush a second layer of oil or butter halfway through baking for extra golden crispiness.
  • Test bake one bomb first to ensure filling and dough cook properly before cooking the whole batch.
