  • 3 large apples (Granny Smith or Honeycrisp), peeled, cored, and finely diced
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice

Crust and Topping

  • Pie crust dough (pre-made or homemade), enough to cut circles for mini pies
  • 2 tablespoons butter, cut into small pieces
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Filling: Peel, core, and finely dice the apples. In a bowl, toss the apples with brown sugar, cinnamon, nutmeg, and lemon juice. Let the mixture sit for 10 minutes to meld flavors and slightly soften the apples.
  2. Roll Out the Dough: On a lightly floured surface, roll out the pie crust dough to about 1/8 inch thickness. Use a round cutter or glass to cut circles large enough to line muffin tin cups, forming the mini pie bases.
  3. Fill the Crusts: Gently press each dough circle into the muffin tin cups. Spoon the apple filling evenly into each, avoiding overfilling. Dot each with small pieces of butter for richness.
  4. Top and Seal: Cut smaller dough circles or shapes to cover each filled pie. Press edges lightly to seal and cut a few small slits on top to let steam escape. Brush the tops with beaten egg for a golden glossy finish.
  5. Bake: Preheat oven to 375°F (190°C). Bake mini pies for 20 to 25 minutes until the crust is golden and the filling bubbles gently. Allow to cool slightly before removing from the tin.

Notes

  • Use cold ingredients and chilled tools to achieve a flakier crust.
  • Avoid overfilling the pies to prevent leaks and soggy bottoms.
  • Vent tops by cutting slits or decorative shapes to allow steam to escape.
  • Definitely brush tops with egg wash to get a golden color and shine.
