Filling
- 3 large apples (Granny Smith or Honeycrisp), peeled, cored, and finely diced
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
Crust and Topping
- Pie crust dough (pre-made or homemade), enough to cut circles for mini pies
- 2 tablespoons butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- Prepare the Filling: Peel, core, and finely dice the apples. In a bowl, toss the apples with brown sugar, cinnamon, nutmeg, and lemon juice. Let the mixture sit for 10 minutes to meld flavors and slightly soften the apples.
- Roll Out the Dough: On a lightly floured surface, roll out the pie crust dough to about 1/8 inch thickness. Use a round cutter or glass to cut circles large enough to line muffin tin cups, forming the mini pie bases.
- Fill the Crusts: Gently press each dough circle into the muffin tin cups. Spoon the apple filling evenly into each, avoiding overfilling. Dot each with small pieces of butter for richness.
- Top and Seal: Cut smaller dough circles or shapes to cover each filled pie. Press edges lightly to seal and cut a few small slits on top to let steam escape. Brush the tops with beaten egg for a golden glossy finish.
- Bake: Preheat oven to 375°F (190°C). Bake mini pies for 20 to 25 minutes until the crust is golden and the filling bubbles gently. Allow to cool slightly before removing from the tin.
Notes
- Use cold ingredients and chilled tools to achieve a flakier crust.
- Avoid overfilling the pies to prevent leaks and soggy bottoms.
- Vent tops by cutting slits or decorative shapes to allow steam to escape.
- Definitely brush tops with egg wash to get a golden color and shine.
- Let the apple filling sit after mixing to release juices and blend flavors.
