  • 1 teaspoon ground cumin
  • 1 teaspoon Aleppo pepper or paprika
  • 1/2 teaspoon salt, or to taste

Instructions

  1. Roast the Peppers: Start by roasting fresh red peppers until their skins char and blister, either on a grill, under a broiler, or over a gas flame. Then, place them in a bowl covered with plastic wrap to steam, which makes peeling easier.
  2. Peel and Seed the Peppers: Once cooled, gently remove the blackened skins and seeds from the peppers to ensure a smooth, non-bitter dip and to keep the vibrant red color.
  3. Combine Ingredients in a Food Processor: Add the peeled roasted peppers, toasted walnuts, breadcrumbs, garlic, lemon juice, olive oil, ground cumin, Aleppo pepper (or paprika), and salt into a food processor.
  4. Blend Until Smooth: Pulse and blend the mixture until creamy yet slightly textured. Taste and adjust seasoning by adding more salt, lemon juice, or spices as preferred.
  5. Serve or Store: Transfer the Muhammara to a bowl, drizzle with a little olive oil on top, and serve with fresh bread, vegetables, or as part of a mezze platter. Store leftovers in an airtight container in the refrigerator.
