Instructions

  2. Brown the Sausage: Heat butter or oil in a large pot or Dutch oven over medium heat. Add the sausage, breaking it up with a spoon, and cook until browned and fully cooked. Remove sausage from pot and set aside.
  3. Sauté the Aromatics: In the same pot, add diced onion, celery, and carrots. Cook for 5 to 7 minutes until softened and fragrant. Stir in minced garlic and cook for an additional minute until aromatic.
  4. Add Potatoes and Broth: Add the peeled and chopped potatoes to the pot, then pour in chicken broth until the vegetables are just covered. Bring the mixture to a gentle boil, reduce heat, and simmer for about 15 minutes or until potatoes are tender.
  5. Combine with Wild Rice and Sausage: Return the cooked sausage and the drained wild rice to the pot. Stir everything together and warm through for about 5 minutes.
