Instructions

  1. Prepare the Raspberries: Place fresh or thawed frozen raspberries in a small saucepan over medium heat. Gently warm them until they start to break down and release their juice, about 3-5 minutes. Strain through a fine sieve to remove seeds for a silky texture.
  2. Heat the Cream: In a separate saucepan or microwave-safe bowl, heat the heavy cream until it is just about to simmer, not boiling. This ensures the ganache will emulsify properly when combined with chocolate.
  3. Combine Chocolate and Raspberry Liquid: Chop your chocolate into small, uniform pieces and place in a heatproof bowl. Pour the hot cream and raspberry juice mixture over the chocolate, letting it sit for 2 minutes to soften the chocolate before stirring gently until smooth and glossy.
  4. Add Butter and Sweeten: Stir in the butter until fully melted and incorporated to add richness and shine. Taste for sweetness and add powdered sugar or another sweetener gradually, mixing well to adjust according to your preference.
  5. Cool or Use Immediately: Your Raspberry Ganache can be used warm as a glaze or allowed to cool and thicken to spread or pipe. Cover and refrigerate if you want a firmer consistency for truffles or cake fillings.
