Ingredients

Scale

Proteins

  • 4 chicken sausages (about 12 oz), sliced into rounds or halves

Vegetables

  • 2 bell peppers, cut into bite-sized pieces
  • 1 medium zucchini, sliced into bite-sized pieces
  • 1 medium red onion, cut into bite-sized pieces
  • 1 cup cherry tomatoes, halved or whole

Seasonings & Oils

  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat and Prepare: Set your oven to 425°F (220°C) to create a hot roasting environment. Line a large sheet pan with parchment paper for easy cleanup and even roasting.
  2. Chop Vegetables and Sausage: Cut bell peppers, zucchini, red onion, and cherry tomatoes into uniform, bite-sized pieces. Slice chicken sausages into rounds or halves based on your preference for presentation and bite size.
  3. Toss Everything With Seasoning: In a large bowl, combine the chopped veggies and sausage slices. Drizzle with olive oil and sprinkle garlic powder, dried Italian herbs, salt, and pepper. Toss everything until evenly coated for balanced roasting.
  4. Arrange on the Sheet Pan: Spread the seasoned sausage and vegetable mixture evenly in a single layer on the prepared sheet pan. Avoid overcrowding to ensure even cooking and caramelization.
  5. Roast Until Tender and Golden: Place the pan in the preheated oven and roast for 25 to 30 minutes, stirring halfway through. Look for golden edges on the vegetables and browned, crisp sausage pieces.
  6. Serve and Enjoy: Remove from the oven and serve hot. Garnish as desired with fresh herbs or a squeeze of lemon juice for extra brightness.

Notes

  • Chop vegetables and sausages uniformly to ensure even cooking.
  • Use a large enough sheet pan to avoid overcrowding, which can cause steaming instead of roasting.
  • Preheat your oven thoroughly to achieve crispy sausages and caramelized veggies.
  • Use high-quality olive oil for better flavor and roasting results.
  • Feel free to customize seasonings and swap vegetables or sausage types to suit your tastes and dietary preferences.
