Ingredients

Scale

Main Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 1 pound ground sausage (mild or spicy)
  • 8 large eggs
  • 1 cup milk or cream
  • 2 cups shredded cheese (cheddar or cheese blend)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Optional Add-ins

  • 1/2 cup diced bell peppers
  • 1 cup fresh spinach, chopped
  • Diced jalapeños (to taste, for spicy kick)
  • Diced tomatoes, zucchini, or kale (1/2 to 1 cup)

Instructions

  1. Cook the Sausage: Brown the ground sausage in a large skillet over medium heat until fully cooked and crumbly, about 5-7 minutes. Drain any excess grease and set aside to cool slightly.
  2. Prepare the Egg Mixture: In a large bowl, whisk together eggs, milk or cream, garlic powder, onion powder, salt, and pepper until well combined and slightly frothy to create a creamy, custard-like texture.
  3. Assemble the Casserole: Spray a 9×13-inch casserole dish with nonstick spray. Spread half of the frozen tater tots evenly on the bottom. Layer the cooked sausage over the tots, then sprinkle half of the shredded cheese. Pour half of the egg mixture gently over the layers. Repeat with the remaining tater tots, cheese, and egg mixture.
  4. Bake: Preheat the oven to 375°F (190°C). Place the casserole uncovered in the oven and bake for 40-45 minutes, or until the eggs are set and the tater tots are golden brown and crispy on top.
  5. Cool and Serve: Allow the casserole to cool for 5 minutes before slicing to help it firm up and blend the flavors beautifully.

Notes

  • Use room temperature eggs for even baking and smooth texture.
  • Don’t overcrowd the pan; spread sausage and tots evenly for uniform cooking.
  • Bake at moderate heat to prevent burnt tots and undercooked eggs.
  • Let the casserole rest before cutting to keep servings neat and intact.
  • Add fresh herbs like parsley or chives on top for a flavor boost.
