Madeira Sauce

  • 1 cup Madeira wine
  • 3/4 cup heavy cream

Cheese

  • 4 oz Gruyère or mozzarella cheese, sliced or shredded

  • Additional salt & freshly ground black pepper, to taste

Instructions

  1. Prepare the Chicken: Season the chicken breasts generously with salt and pepper. Heat olive oil in a skillet over medium-high heat, then sear the chicken until golden brown on both sides, about 4-5 minutes per side. Remove the chicken and set aside.
  2. Sauté Mushrooms and Aromatics: In the same skillet, add butter, then toss in finely chopped shallots and garlic. Cook until fragrant and translucent, about 2-3 minutes. Add sliced mushrooms and cook until they release moisture and begin to brown, about 6-8 minutes.
  3. Create the Madeira Sauce: Pour in Madeira wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half to concentrate the flavors, about 5-7 minutes. Then stir in the heavy cream and bring to a gentle simmer until the sauce thickens slightly, around 3-5 minutes.
  4. Combine and Melt Cheese: Return the chicken to the skillet, spoon some sauce and mushrooms over each breast, then top with slices or shredded cheese. Cover the pan and let the cheese melt and chicken finish cooking through, about 3-5 minutes.
  5. Garnish and Serve: Sprinkle chopped fresh parsley or thyme over the dish, add an extra grind of black pepper if desired, and serve hot with your favorite sides.
