Ingredients

Scale

Sushi Rice Mixture

  • 1 cup short-grain sushi rice
  • 2 tablespoons rice vinegar

Shrimp

  • 8 ounces cooked shrimp, peeled and deveined (fresh or frozen)

Vegetables & Fruit

  • 1/2 cup cucumber, diced
  • 1 ripe avocado, thinly sliced

Garnishes & Condiments

  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 teaspoon toasted sesame seeds
  • Wasabi (to taste)
  • Pickled ginger (to serve on the side)

Instructions

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, gently fold in rice vinegar and allow the rice to cool to room temperature before using.
  2. Cook and Prepare Shrimp: If using raw shrimp, quickly boil or steam them until they turn pink and opaque. Chop into bite-sized pieces for layering or leave whole for garnish.
  3. Prep Vegetables and Avocado: Dice the cucumber into small cubes for a crisp texture. Thinly slice the avocado to add creamy layers to the stack.
  4. Assemble the Shrimp Sushi Stack: Using a ring mold, start by layering sushi rice at the bottom, then add a layer of cucumber, followed by avocado, and then shrimp. Repeat layers as desired, pressing lightly between each layer to create a compact stack.
  5. Garnish and Serve: Carefully remove the mold, drizzle soy sauce on top, and sprinkle toasted sesame seeds. Serve with wasabi and pickled ginger on the side for full flavor.

Notes

  • Avoid overcooking sushi rice; it should be sticky but not mushy to hold the stack well.
  • Keep shrimp and vegetables chilled prior to assembly for freshness and easier layering.
  • Use a ring mold to achieve neat, uniform layers that look professional.
  • Cut all ingredients evenly for balanced bites and an attractive presentation.
  • Use high-quality shrimp and fresh produce for the best tasting stack.
