Ingredients

Scale

Chicken and Dairy

  • 2 lbs bone-in chicken thighs
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream or half-and-half

Vegetables

  • 3 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 4 garlic cloves, minced

Liquids and Seasonings

  • 4 cups chicken broth
  • 1 tbsp Italian herbs (mix of rosemary, thyme, oregano)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil (for searing, optional)

Instructions

  1. Prepare Your Ingredients: Chop carrots, celery, and onion into uniform pieces for even cooking. Mince garlic finely to maximize flavor infusion during slow cooking.
  2. Sear the Chicken: Optionally, brown the chicken thighs in a hot pan with a bit of olive oil to seal in juices and add caramelized flavor to the stew base.
  3. Layer the Slow Cooker: Place chopped vegetables and minced garlic at the bottom of the slow cooker. Nestle the browned chicken thighs on top, then pour in the chicken broth. Sprinkle Italian herbs, salt, and pepper evenly over all.
  4. Slow Cook: Set the slow cooker to low and let stew simmer gently for 6 to 7 hours until the chicken is tender and flavors meld beautifully.
  5. Finish with Cream and Parmesan: About 30 minutes before serving, stir in heavy cream and grated Parmesan cheese. Let the stew thicken into a creamy delight. Adjust seasoning as needed.

Notes

  • Use bone-in chicken thighs for richer broth flavor.
  • Searing the chicken adds depth and locks in moisture but is optional.
  • Add Parmesan cheese towards the end to prevent clumping or separation.
  • Fresh herbs brighten the flavor and aroma more than dried herbs.
  • Keep the slow cooker lid closed during cooking to maintain heat and timing.
