Ingredients

Scale

Meat and Vegetables

  • 1 lb sirloin or flank steak, thinly sliced into strips
  • 1 each green bell pepper, sliced into strips
  • 1 each red bell pepper, sliced into strips
  • 1 each yellow bell pepper, sliced into strips
  • 1 medium onion, sliced into strips
  • 3 garlic cloves, minced

Sauce & Seasoning

  • ⅓ cup soy sauce (or tamari for gluten-free)
  • ½ cup beef broth (use reduced sodium if preferred)
  • 2 tablespoons brown sugar
  • Freshly cracked black pepper, to taste

Other

  • 2 tablespoons olive oil or vegetable oil (for browning beef)
  • 1 tablespoon cornstarch (for thickening)
  • 1 tablespoon cold water (to mix with cornstarch)

Instructions

  1. Prepare the Beef and Vegetables: Slice the beef thinly across the grain for maximum tenderness. Cut the bell peppers and onion into strips, and mince the garlic cloves to release their flavor.
  2. Brown the Beef: Heat oil in a skillet over medium-high heat. In batches, quickly brown the beef strips to add caramelized flavor and seal in juices. Transfer the browned beef to the slow cooker.
  3. Mix the Sauce: In a bowl, whisk together soy sauce, beef broth, brown sugar, minced garlic, and freshly cracked black pepper. This creates a rich and balanced sauce that will infuse the dish.
  4. Combine and Slow Cook: Add the sliced bell peppers and onions on top of the beef in the slow cooker. Pour the sauce evenly over all ingredients. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until beef is tender and peppers are cooked but still retain some texture.
  5. Thicken the Sauce: About 15 minutes before serving, mix cornstarch with cold water to make a slurry. Stir this into the slow cooker and cook uncovered to thicken the sauce to a glossy consistency.

Notes

  • Thin slices of beef help it cook quickly and remain tender.
  • Browning the beef before slow cooking deepens the flavor.
  • Use fresh garlic and freshly cracked pepper for vibrant, fresh notes.
  • Add cornstarch slurry late to avoid overly thick or gloopy sauce.
  • Cooking times may vary based on your slow cooker; check tenderness rather than relying on exact times.
