Ingredients

Scale

Crust

  • 24 Oreos (cookies)
  • 6 tablespoons Unsalted Butter, melted

Cheesecake Filling

  • 16 ounces Cream Cheese, softened
  • 1/2 cup Sour Cream
  • 3/4 cup Granulated Sugar
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract

Fruit Topping

  • 1 cup Fresh Strawberries, chopped
  • 1/4 cup Strawberry Jam

Instructions

  1. Prepare the Oreo Crust: Crush the Oreos into fine crumbs using a ziplock bag and rolling pin or food processor. Combine the crumbs with melted butter until crumbly. Press evenly into the bottom of a greased 9×9-inch baking pan and chill in the refrigerator while preparing the filling.
  2. Make the Cheesecake Filling: Beat softened cream cheese and sour cream together in a large bowl until smooth. Gradually add sugar and beat until incorporated. Add eggs one at a time, mixing well after each, then stir in vanilla extract. Ensure mixture is smooth and lump-free.
  3. Add Fresh Strawberries and Jam: Gently fold chopped strawberries and strawberry jam into the cheesecake batter to evenly distribute the fruity bursts and sweetness.
  4. Assemble and Bake: Pour the cheesecake mixture over the chilled Oreo crust and spread evenly using an offset spatula. Bake at 325°F (165°C) for 40-45 minutes, until the center is almost set but still slightly jiggly to maintain a creamy texture.
  5. Cool and Chill: Remove from oven and cool to room temperature on a wire rack. Refrigerate for at least 4 hours or overnight to allow the cheesecake to firm up and flavors to meld before slicing.

Notes

  • Use room temperature cream cheese and eggs for a smooth batter.
  • Press the crust firmly into the pan to avoid crumbling during slicing.
  • Don’t overbake; remove bars when center still jiggles slightly.
  • Cool cheesecake gradually to prevent cracks on the surface.
  • Use a warmed, sharp knife for clean slicing.
