  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and chopped
  • 1 cup green beans or peas

Liquids

  • 6 cups low-sodium chicken or turkey broth

Herbs and Spices

  • 2 bay leaves
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Cooking Fats

  • 1 tablespoon olive oil or butter

Optional Variations

  • Red pepper flakes or cayenne pepper for a spicy kick
  • Sweet potatoes, parsnips, or turnips as alternative root vegetables
  • Kale, spinach, or Swiss chard added near the end
  • Cooked barley, quinoa, or brown rice for added heartiness

Instructions

  1. Prepare the Vegetables: Wash and chop your carrots, celery, onions, potatoes, and any other vegetables you choose to include. Keep the pieces bite-sized to ensure they cook evenly and blend well in the soup.
  2. Sauté Aromatics: In a large pot, heat a small amount of olive oil or butter over medium heat. Add onions and garlic, cooking until softened and fragrant to create a flavorful base for the soup.
  3. Add Vegetables and Broth: Stir in chopped carrots, celery, potatoes, and green beans or peas. Pour in the broth, stirring gently to combine everything evenly. Add bay leaves and herbs at this stage to infuse deeper flavors.
  4. Simmer Until Tender: Bring the soup to a boil, then reduce heat to low and cover. Let it simmer for 25 to 30 minutes, or until the vegetables are tender and the flavors meld together beautifully.
  5. Add Turkey: Fold in cooked turkey pieces during the last 5 to 10 minutes to warm through without drying out. Adjust seasoning with salt and pepper as needed.
  6. Serve Warm: Remove bay leaves before serving. Ladle the soup into bowls and enjoy the comforting warmth of your homemade Turkey Vegetable Soup.

Notes

  • Use Fresh Ingredients: Fresh vegetables and quality broth make the most flavorful soup.
  • Don’t Overcook the Turkey: Add turkey towards the end to avoid it becoming tough or dry.
  • Customize Herbs: Experiment with different fresh or dried herbs to suit your flavor preferences.
  • Skim Fat: If using turkey with skin, skim the excess fat from the broth for a cleaner taste.
  • Batch Cook: Make a large batch and refrigerate or freeze portions for quick meals all week.
